Easy Gluten Free Chocolate Chip Snack Cake

Sometimes recipe fails turn into the most wonderful successes, am I right? I was on a mission to make chocolate chip scones (which failed miserably, but that’s a story for another day) when this easy gluten free chocolate chip snack cake was born. I would hardly consider what I made the first round of recipe testing “scones”, so with a few tweaks the outcome was this masterpiece. It turned out so well that I’ve made it countless times because it’s so easy and so delicious!

This snack cake is naturally gluten free using a combination of almond flour and arrowroot flour It’s also refined sugar free because it’s sweetened using only maple syrup! Be sure to use a paleo chocolate chip to keep this entirely paleo. You can also just use your favorite chocolate chips (or whatever you have in the pantry). Nine and a half times out of ten when any of my recipes call for chocolate chips, you’ll find me using dark chocolate. For me, it’s a richer and deeper flavor that pairs so well with pretty much everything.

Gathering all of the ingredients will likely take you longer than actually making the recipe. It’s so simple, which is one of the many reasons I love it so much. You will start by combining the almond flour, arrowroot, baking soda and salt in a medium bowl. You will then combine the eggs, vanilla, coconut oil, and maple syrup in a large bowl. Next you will add the dry ingredients to the wet ones and combine them. You’ll finish off by folding in chocolate chips and pouring into a greased or parchment lined 8×8 pan. The last step is (slightly) optional but I don’t ever suggest skipping it. Sprinkle more chocolate chips on top and bake it in the oven and prepare for your house to smell like heaven!

Ingredients

  • 2 cups almond flour
  • cup arrowroot flour
  • 1 tsp baking soda
  • ¼ tsp salt
  • 2 eggs
  • 1 tsp vanilla
  • ¼ cup melted coconut oil
  • ¼ cup maple syrup
  • cup chocolate chips (plus more to top!)

Instructions

  • Preheat oven to 350℉
  • In a medium bowl combine the almond flour, arrowroot, baking soda, and salt
  • In a large bowl combine the eggs, vanilla, melted coconut oil, and maple syrup
  • Add dry ingredients into wet and stir to combine
  • Stir in chocolate chips until evenly mixed
  • Pour into a parchment lined 8×8 inch square pan and top with additional chocolate chips
  • Bake for 17-22 minutes until the edges begin to turn golden
  • Let cool before slicing and enjoy!
