Easy Gluten Free Chocolate Chip Snack Cake

Think chocolate chip cookie meets the snacking cake of your dreams with this simple recipe! Naturally gluten free and easily paleo, you'll be snacking your way into happiness.

Ingredients
  

  • 2 cups almond flour
  • cup arrowroot flour
  • 1 tsp baking soda
  • ¼ tsp salt
  • 2 eggs
  • 1 tsp vanilla
  • ¼ cup melted coconut oil
  • ¼ cup maple syrup
  • cup chocolate chips (plus more to top!)

Instructions
 

  • Preheat oven to 350℉
  • In a medium bowl combine the almond flour, arrowroot, baking soda, and salt
  • In a large bowl combine the eggs, vanilla, melted coconut oil, and maple syrup
  • Add dry ingredients into wet and stir to combine
  • Stir in chocolate chips until evenly mixed
  • Pour into a parchment lined 8x8 inch square pan and top with additional chocolate chips
  • Bake for 17-22 minutes until the edges begin to turn golden
  • Let cool before slicing and enjoy!
