Apple Pie Baked Oatmeal Cups

Apple Pie Baked Oatmeal Cups

The mornings have started to get *crisp* in temperature. The leaves have started to turn in color. Penn State football has been playing on Saturdays and we’re at that point in the season where we’re still winning and our hopes are high (I’m a Penn Stater, I can say that). It can only mean one thing – time to go apple picking and come home with pounds of apples you absolutely didn’t need but got anyway. These Apple Pie Baked Oatmeal Cups are the perfect recipe to use some of them up!

Baked oatmeal cups are also great for meal prep. Just like my Blueberry Pecan Baked Oatmeal Cups, these come in handy when you don’t leave yourself enough time to make breakfast or you’re needing to grab a quick afternoon snack! They’re fairly easy to make and the flavor possibilities are endless. This version gives me major apple pie vibes. Hearty chunks of apples mixed with a spice blend that will make you think you’re having dessert for breakfast. They’re naturally gluten, dairy, and refined sugar free, but you’d never know. I personally don’t like my breakfast too sweet, but feel free to add more maple syrup if you want yours sweeter! My personal favorite way to eat them is warmed up and drizzled in nut butter, but you really can’t go wrong just munching on them as is.

Feel free to customize these oatmeal cups how you please! Choose your favorite type of apple or use whatever you have on hand at home! Don’t like pecans? Substitute walnuts. Don’t like nuts at all? Leave them out. But whatever you do, buy reusable silicone baking cups. I guarantee they will change your life and they allow these oatmeal cups to pop right out. Make sure to read the recipe notes for best results if you use them!

The hardest part of this recipe is peeling and chopping the apple if I’m being honest. From there, it’s just a matter of combining all of the wet ingredients in one bowl, the dry in another, and then combining the two. Once that’s done, you add the mix-ins and then plop them into muffin cups and let them bake. They are truly such a great fall recipe!

  • 1/4 tsp ground ginger
  • 1/4 tsp allspice
  • 1/2 tsp nutmeg
  • 1/2 cup unsweetened applesauce
  • 1/4 cup maple syrup

Instructions

  • Preheat your oven to 350°

  • Roughly chop pecans and set aside
  • In a medium bowl, combine oats, baking powder, and spices
  • In a large bowl, combine applesauce, maple syrup, vanilla, and almond butter
  • Add dry ingredients to wet and stir to combine
  • Add milk and stir to combine
  • Fold in apple chunks and pecan pieces
  • Divide evenly among 12 muffin cups and bake for 18-20 minutes, placing on cooling rack once cool enough to touch

Notes

*If you’re using the reusable muffin cups, I like to take my oatmeal cups out as soon as they’re cool enough to touch. I find that they can get a bit soggy if they’re left to cool in the cups.
*You can substitute 1 large mashed banana for the applesauce, but your cups may have a slight banana flavor to them.
*If you want these sweeter, increase the maple syrup to 1/3 – 1/2 cup.
*Due to the moisture from the apples, these are best consumed within 1-2 days and then stored in the freezer after that.
