Apple Pie Baked Oatmeal Cups

These easy baked oatmeal cups are sure to be a weekly staple in your house! Think apple pie meets oatmeal baked into an easy grab-and-go, healthy breakfast or snack option.

Ingredients
  

  • 3 cups old fashioned oats
  • 1 tsp baking powder
  • 1 1/4 tsp cinnamon
  • 1/4 tsp ground ginger
  • 1/4 tsp allspice
  • 1/2 tsp nutmeg
  • 1/2 cup unsweetened applesauce
  • 1/4 cup maple syrup
  • 1 tsp vanilla extract
  • 1/3 cup almond butter
  • 3/4 cup almond milk
  • 1 cup apples, peeled and diced (about 1 medium)
  • 1/2 cup pecans, chopped

Instructions
 

  • Preheat your oven to 350°
  • Peel and dice 1 small apple and set aside
  • Roughly chop pecans and set aside
  • In a medium bowl, combine oats, baking powder, and spices
  • In a large bowl, combine applesauce, maple syrup, vanilla, and almond butter
  • Add dry ingredients to wet and stir to combine
  • Add milk and stir to combine
  • Fold in apple chunks and pecan pieces
  • Divide evenly among 12 muffin cups and bake for 18-20 minutes, placing on cooling rack once cool enough to touch

Notes

*If you're using the reusable muffin cups, I like to take my oatmeal cups out as soon as they're cool enough to touch. I find that they can get a bit soggy if they're left to cool in the cups.
*You can substitute 1 large mashed banana for the applesauce, but your cups may have a slight banana flavor to them. 
*If you want these sweeter, increase the maple syrup to 1/3 - 1/2 cup.
*Due to the moisture from the apples, these are best consumed within 1-2 days and then stored in the freezer after that.
