Pumpkin Oatmeal Raisin Cookies
I know that pumpkin season can be a controversial time. Some people can’t get enough of adding pumpkin to everything. Some people curse the first person that ever added pumpkin to something. Me? I fall somewhere in the middle. These pumpkin oatmeal raisin cookies just might convert the pumpkin haters though. The addition of the pumpkin elevates this classic recipe and keeps these cookies nice and moist. They are the perfect addition to your fall baking list!
These cookies are naturally gluten free by using oats and oat flour. You can either make your own oat flour or buy it pre-made. To make your own, simply add oats to a blender and blend until you have a fine powder. I usually make a large batch when I do it and store it in an air-tight container in my pantry to use for future recipes. Traditional oatmeal raisin cookies call for both white and brown sugar. To keep these cookies refined sugar free, I chose both maple syrup and coconut sugar. I think they add a different type of sweetness individually, so the combination of the two work perfectly together.
Now onto the fun part – making the pumpkin oatmeal raisin cookies! First, beat the softened butter and sugar using a hand mixer. Then, add the eggs and vanilla and beat again. Next, add the maple syrup and pumpkin until all of your wet ingredients are combined. In a separate medium bowl, combine all of your dry ingredients. Once the dry ingredients are combined with the wet, the last step is to fold in the raisins. All that’s left is to drop the cookies onto a sheet and bake them!
If you don’t own a cookie scoop, please invest in one. I spent years using two big spoons to scoop out cookie dough and I wish I knew why. It makes life so simple and I couldn’t recommend it more, even if you don’t consider yourself someone who bakes often. It doesn’t have to be anything fancy! I bought a 3 pack of varying sizes from my local Home Goods. However you choose to scoop the dough, I can’t wait for you to bake these and fill your house with the most delicious smell!
Pumpkin Oatmeal Raisin Cookies
Ingredients
- 6 tbsp butter softened
- ¾ cup coconut sugar
- 2 eggs
- 1 tsp vanilla
- ¼ cup maple syrup
- ½ cup pumpkin
- 3 cups oats
- 1 cup oat flour
- ½ tsp baking soda
- ½ tsp baking powder
- 1 tbsp pumpkin pie spice
- ¼ tsp salt
- 1 cup raisins
Instructions
- Preheat oven to 350℉
- In a large bowl, beat butter and coconut sugar using a hand mixer until combined
- Add eggs and vanilla and beat until combined
- Add maple syrup and pumpkin and beat until combined
- In a medium bowl, combine the oats, oat flour, baking soda, baking powder, pumpkin pie spice, and salt
- Add dry ingredients to the large bowl with the wet ingredients and mix until combined
- Fold in the raisins until evenly distributed
- Using a cookie scoop, scoop batter onto parchment lined baking sheets. Push down slightly on each cookie to smash them and shape into cookie shape (these will not spread!)
- Bake at 350℉ for 15-18 minutes until the bottoms are slightly golden brown
- Immediately transfer to a cooling rack and enjoy!
