Pumpkin Oatmeal Raisin Cookies

A fall version of a classic, these pumpkin oatmeal raisin cookies are the perfect level of pumpkin and spice and naturally gluten free!
Servings: 24 cookies

Ingredients
  

  • 6 tbsp butter softened
  • ¾ cup coconut sugar
  • 2 eggs
  • 1 tsp vanilla
  • ¼ cup maple syrup
  • ½ cup pumpkin
  • 3 cups oats
  • 1 cup oat flour
  • ½ tsp baking soda
  • ½ tsp baking powder
  • 1 tbsp pumpkin pie spice
  • ¼ tsp salt
  • 1 cup raisins

Method
 

  1. Preheat oven to 350℉
  2. In a large bowl, beat butter and coconut sugar using a hand mixer until combined
  3. Add eggs and vanilla and beat until combined
  4. Add maple syrup and pumpkin and beat until combined
  5. In a medium bowl, combine the oats, oat flour, baking soda, baking powder, pumpkin pie spice, and salt
  6. Add dry ingredients to the large bowl with the wet ingredients and mix until combined
  7. Fold in the raisins until evenly distributed
  8. Using a cookie scoop, scoop batter onto parchment lined baking sheets. Push down slightly on each cookie to smash them and shape into cookie shape (these will not spread!)
  9. Bake at 350℉ for 15-18 minutes until the bottoms are slightly golden brown
  10. Immediately transfer to a cooling rack and enjoy!
