Pumpkin Oatmeal Raisin Cookies

A fall version of a classic, these pumpkin oatmeal raisin cookies are the perfect level of pumpkin and spice and naturally gluten free!
Servings 24 cookies

Ingredients
  

  • 6 tbsp butter softened
  • ¾ cup coconut sugar
  • 2 eggs
  • 1 tsp vanilla
  • ¼ cup maple syrup
  • ½ cup pumpkin
  • 3 cups oats
  • 1 cup oat flour
  • ½ tsp baking soda
  • ½ tsp baking powder
  • 1 tbsp pumpkin pie spice
  • ¼ tsp salt
  • 1 cup raisins

Instructions
 

  • Preheat oven to 350℉
  • In a large bowl, beat butter and coconut sugar using a hand mixer until combined
  • Add eggs and vanilla and beat until combined
  • Add maple syrup and pumpkin and beat until combined
  • In a medium bowl, combine the oats, oat flour, baking soda, baking powder, pumpkin pie spice, and salt
  • Add dry ingredients to the large bowl with the wet ingredients and mix until combined
  • Fold in the raisins until evenly distributed
  • Using a cookie scoop, scoop batter onto parchment lined baking sheets. Push down slightly on each cookie to smash them and shape into cookie shape (these will not spread!)
  • Bake at 350℉ for 15-18 minutes until the bottoms are slightly golden brown
  • Immediately transfer to a cooling rack and enjoy!
