Easy 30-Minute Egg Roll in a Bowl

Healthy, delicious and ready in 30 minutes, this egg roll in a bowl is full of fresh flavors and tastes just like the inside of an egg roll!

Ingredients
  

  • 1 lb ground beef (can use chicken or pork)
  • 5 medium garlic cloves, minced
  • 2 inch ginger knob, minced
  • 1 bunch scallions, chopped (green and white parts separated)
  • 2 14 oz bags coleslaw mix
  • ½ cup liquid/coconut aminos*
  • 1 tsp rice wine vinegar
  • 2 tbsp sesame oil, separated
  • salt and pepper, to taste
  • toasted sesame oil and toasted sesame seeds, optional for topping

Method
 

  1. Heat 1 tablespoon of sesame oil in a nonstick pan over medium heat
  2. Saute ground meat until fully cooked
  3. Remove meat from pan and place in a separate bowl
  4. Lower heat to medium/low and add remaining 1 tablespoon of sesame oil
  5. Saute garlic, ginger, and the white part of the scallions about 30 seconds or until fragrant
  6. Add both bags of coleslaw mix to the pan and saute 5-7 minutes until softened
  7. While the coleslaw is cooking, mix 1/2 cup aminos and 1 teaspoon rice wine vinegar in a separate bowl or measuring cup
  8. Once softened, add the cooked ground meat and sauce back into the pan and stir until fully incorporated
  9. Taste and add salt and pepper to taste if needed
  10. Serve and top with green part of the scallions, toasted sesame oil, sesame seeds and enjoy!

Notes

*I use 1/4 cup liquid aminos, 1/4 cup coconut aminos
